Jack's backstory is intriguing to us all. I don't know the full story, can't even imagine some of the things he's seen and done. But that he's suffered loss and betrayal is clear.
I am not certain why he wished to be part of polite society, except that it was in rebellion of Teague. Something about the way he says to Will, "Pirate is in your blood, and you'll have to square with that someday" strongly suggests Jack had to do his own squaring.
