Jack is a man who needs to be held loosely. As difficult as it is for Sarah to let him go, she recognizes that it's tve only way to get him to return at all. Poor Jack, gritting his teeth for the wait! I'm pretty sure Sarah gave him something nice for that.
With her, he's more honest than almost ay other time. I do think Jack "tells the truth quite a lot" but also knows how to blow smoke and mirrors without actually lying. he lays himself wide open for Sarah and lets himself be vulnerable.
